Black Currant Popsicles (Print Version)

Tangy frozen treats made with fresh blackcurrant juice, perfectly sweetened for a cool summer delight.

# What You'll Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# How To Make It:

01 - Combine blackcurrant juice and granulated sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow to boil.
02 - Remove from heat and stir in fresh lemon juice. Allow the mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, distribute them evenly among popsicle molds.
04 - Pour the cooled blackcurrant mixture into molds, leaving approximately 1/4 inch of space at the top to allow for expansion during freezing.
05 - Insert popsicle sticks into each mold and place in freezer for a minimum of 4 hours until completely set and firm.
06 - Run the exterior of the molds briefly under warm water and gently pull out the frozen popsicles to release from molds.
