A zesty pasta mix with black beans, corn, avocado, and creamy lime dressing.

# What You'll Need:

→ Pasta

01 - 12 oz rotini or fusilli pasta

→ Vegetables

02 - 1 cup cherry tomatoes, halved
03 - 1 cup canned black beans, drained and rinsed
04 - 1 cup canned corn, drained
05 - 1 red bell pepper, diced
06 - 1/2 small red onion, finely diced
07 - 1 avocado, diced
08 - 1/4 cup fresh cilantro, chopped

→ Cheese

09 - 1 cup shredded cheddar cheese

→ Dressing

10 - 1/2 cup sour cream
11 - 1/4 cup mayonnaise
12 - 2 tablespoons fresh lime juice
13 - 1 packet taco seasoning
14 - 1/2 teaspoon salt
15 - 1/4 teaspoon black pepper

→ Garnish

16 - 1/2 cup crushed tortilla chips
17 - Fresh cilantro for serving

# How To Make It:

01 - Cook pasta according to package instructions until al dente. Drain in colander, rinse under cold running water, and transfer to a bowl to cool completely.
02 - In a large mixing bowl, combine cherry tomatoes, black beans, corn, red bell pepper, red onion, avocado, cilantro, and cheddar cheese. Toss gently to combine.
03 - In a small mixing bowl, whisk together sour cream, mayonnaise, lime juice, taco seasoning, salt, and black pepper until smooth and fully incorporated.
04 - Add cooled pasta to the vegetable mixture. Pour dressing over the salad and toss gently with utensils until all ingredients are evenly coated.
05 - Transfer salad to refrigerator and chill for at least 30 minutes. This resting period allows the flavors to meld and develop fully.
06 - Remove from refrigerator just before serving. Top with crushed tortilla chips and fresh cilantro if desired. Serve chilled.

# Expert Tips:

01 -
  • It actually gets better the longer it sits, so you can make it hours ahead without panic.
  • Kids and picky eaters usually go for it because it feels fun, not healthy, even though it absolutely is.
  • The lime-sour cream combo is addictive in a way that makes people ask for the recipe three times.
02 -
  • If you add the avocado too early, it browns and turns the whole thing grayish—wait until the last possible moment, or even prep it separately and let people add their own.
  • Cold pasta salad needs more seasoning than you think because cold dulls flavors, so taste as you go and don't be shy with the lime juice or taco seasoning.
03 -
  • Squeeze your lime juice right into the dressing bowl—the freshness makes a difference that bottled juice simply cannot match.
  • If the dressing looks too thick after chilling, whisk in a tablespoon of milk or a splash more lime juice to bring it back to a creamy consistency without making it runny.
